Trader Joe's Chocolate Chocolate-Chip Pancake-slash-Cookies

Trader Joe's, with their excellent prepared foods, has an excellent pancake mix for chocolate-chocolate chip pancakes. They make on sample days sometimes, with whipped cream, and they are very rich, and delicious.

I was in a hurry for a dinner party dessert yesterday, and followed the recipe on the box for the cookies, and had to use almond extract instead of vanilla - my car is in the shop so no grocery store trip for me! - and added about 1/2 cup of white chocolate chips for some visual variety.

They turned out great! I used only about 1/2 teaspoon of almond extract, and the chips. I scooped them with a small spoon onto the cookie tray and refridgerated it for ten minutes before baking, it helped keep them chewy and puffed up. Thy only drawback is that the Trader Joe's base recipe makes about a dozen regular-sized cookies. I ended up softening some ice cream and making homemade ice cream sandwiches with 'em, and they were a hit, and easy. They definitely satisfy a chocolate craving and the white chocolate chips sweeten them up and add a gourmet touch, whatever that means.
